Are you looking for a new idea of recipes for this winter that settled ?! Here is a delicious recipe of Cookies with Almonds and Bitter Cherries by Laura Annaert !

A beautiful balance between sweetness and bitterness, inspired by Italy, one of the homelands greedy Laura, and " amaretti ", small biscuits Italian bitter almond.

For 10 to 20 cookies for snacking in good company :

Duration :

Preparation time : 20 minutes

Cooking time : 15 minutes

Ingredients :

  • 100 g of wheat flour type 55
  • 50 g starch of rice
  • 30 g of oat flakes
  • ½ Sachet of baking powder
  • ¼ Teaspoon fleur de sel
  • 110 g of neutral oil, fresh butter, ghee...
  • 120 g raw cane sugar
  • 1 egg
  • A few spoonfuls of milk or water
  • 100 g of bitter almonds Baba Bahri
  • 3 tbsp of morello cherry, wild candied (or cherry jam)

Preparation :

Step 1 :

  • Come out and cover the grid and a baking tray with baking paper.
  • Preheat the oven to 180c°

Step 2 :

  • In a bowl mix the dry materials ; flour, potato starch, flakes, yeast and salt.
  • In a second bowl, mix the oil with the sugar.
  • Then whip until the mixture becomes pale and fluffy.
  • Add the whole egg.
  • Pour the dry mixture gradually, mixing with a spatula*.
  • Add bitter almonds crushed and cherries candied.

PS* : If the dough seems too hard, to lie with a bit of milk or water.

Step 3 :

  • Sample of small piles of dough with a spoon and space on the plate.
  • Slide the tray to the oven down to 180°C for a cooking time of about 12 min. (Or al dente, or the oven down to 170 °C hardly more long for a soft texture).

And voila, it is ready to be served and to be enjoyed !
