Bsissa Artisanale de Tunisie

Did you know that in Tunisia, the friend of the breakfast combines the feminine and takes the sweet name of Bsissa ! 

And the Bsissa, what is it ? Well this is a traditional preparation of cereals, pulses, and spices. It is usually consumed mixed with olive oil and honey to breakfast time. Imagine you have a spreadable paste, that is done at home without additives or preservatives, highly nutritious and rich in vitamins. It is said of the Bsissa that it is a bit of a flat miracle or a magic potion of tunisians. It is gaining a resurgence in popularity during the month of Ramadan where its nutritional qualities and its wealth of calories are better able to support the young and the hungry. In their book, " the Treaty of chickpeas ", Robert Gipsoteca and Farouk Mardam-Bey mention that the Bsissa in the tradition of the bedouin was recommended to travellers and pilgrims. And this I want to believe it because the Bsissa is a mixture of highly nutritious, with a ratio quantity/nutrition high.

Like any traditional preparation that respect there are often multiple variants depending on the regions. The base is always to associate a cereals like wheat, barley or sorghum to a second ingredient, usually a legume-type chickpea, lentil, or fenugreek. This mixture is then flavoured with spices (marjoram, anise green, or rose petals), and sometimes embellished with dried fruit !

Some trace the origin of the Bsissa to the Romans through some of the mosaics that have been found in Tunisia, while others at the end of the Paleolithic age ! Needless to say it does not date from yesterday. For my part, it is only since a few years that I started to incorporate it into my diet and I am very happy ! Whether at breakfast or in the kitchen Bsissa allows you to integrate other types of flour in their diet and especially to bring a bouquet of flavors, fresh and fragrant. All the more as the preparation in a chocolate spread is not its only use. There are amounts of revenue as a function of season (summer or winter) and cravings. 🙂
